SPICED CARROT SOUP SHOTS Ingredients 2-3 medium carrots peeled and roughly chopped 1 fresh red chilli chopped 4-5 black peppercorns 2 tbsps extra virgin olive oil 1 medium onion sliced 1 tsp chopped garlic 1 small potato peeled and roughly chopped Salt to taste A few sprigs of fresh coriander leaves Method 1. Heat 1 tbsp olive oil in a deep non stick pan add onion and garlic and saute for 1 minute. 2. Add black peppercorns potato and carrot and saute for another minute. Add salt and mix. Add fresh red chilli and mix. Add 2 cups water and mix. 3. Heat remaining olive oil in a non stick pan. Finely chop a few sprigs of fresh coriander leaves. 4. Cover the pan with carrots and cook till soft. Cool and transfer into a blender jar. 5. Add coriander leaves to the other pan and switch off the heat. 6. Blend the carrot mixture till smooth. Add a little water to adjust the consistency. 7. Transfer the mixture into a jar and then pour into shot glasses. Garnish with the coriander leaves in extra virgin olive oil and serve.
